Amber is collaborating with Singapore’s Restaurant Andre to celebrate the launch of Andre Chiang’s cookbook

After full-house dinners featuring Ferran Adria and Corey Lee, the ‘Friends of Amber’ dining series is back this May. The restaurant’s culinary director Richard Ekkebus will invite chef Andre Chiang, from Singapore’s Restaurant Andre, in a two-night celebration event at the Landmark Mandarin Oriental.

From May 30 and 31st, chefs Ekkebus and Chiang will join forces in creating a special eight-course dinner menu celebrating the launch of Chiang’s cookbook, Octaphilosophy: The Eight Elements of Restaurant Andre. The four-hand dinner menu will include a collection of dishes from Chiang’s published work, including charred Gillardeau oyster, emulsion of watercress with wasabi and warm foie gras jelly with perigord black truffle coulis. The two-chef crossover event will also feature Amber’s signature sea urchin dish as a tribute and a bid goodbye as the dish will retire from the restaurant’s a la carte menu after May 31.

The Amber and Restaurant Andre four-hand dinner event is priced at HK$3,188 per person, which includes a complimentary copy of chef Chiang’s cookbook alongside dinner.  Reservations are strongly recommended.
