Tentatively launching late July, the esteemed mixologist’s newest venue is a discreet cocktail parlour within a hotel

Celebrated mixologist Antonio Lai has a new project this summer. The cocktail maverick behind esteemed bars in the likes of Quinary and Angel’s Share is set to open Room 309, a new discreet cocktail parlour within Central’s The Pottinger later this month.

Set as a cocktail venue hidden within the boutique hotel that also houses Ta Vie, Gradini, and The Envoy, one of Lai’s other venues, Room 309 signifies an intimate venue as the only room in the hotel that ends with a ‘9’, the new bar is richly embellished with antique brass fixtures with furniture settings placed within the room. Guests are expected to check in at a special reception area on the hotel’s third floor and enter the premise with a special keycard.

Shaken and stirred by resident bar manager Hungie Fong and Antonio Lai himself, the duo prepare cocktails with unique spirits that are often re-distilled or clarified. Room 309 is set to open with an ‘invisible menu’ featuring clear cocktails such as notable creations in the likes of Gone Gimlet (re-distilled yoghurt gin with lemon peel, tonka beans, cream, and lime cordial) and Where’s My Whiskey Sour (re-distilled bourbon with barrel wood chips, orange peel, clarified peach tea cordial, peaches and cream foam and aromatic bitters)
