Renowned sushi master Ryujiro Nakamura set to collaborate with Eric Räty for two-day culinary showcase

After the sold-out success of its collaboration with Osaka’s La Cime in August, Arbor is set to present its second culinary collaboration of the series, as Eric Raty invites Japan’s sushi master Ryujiro Nakamura of Umi for a French and Japanese exchange for two consecutive days in October.

With over 40 years of grandeur and history, Umi focuses on amplifying natural flavours in its cuisine. Nakamura apprenticed under sushi legend chef Nagano and joined Umi at the age of 26, preserving the standards left by his mentor’s legacy since 2015.  On October 9 and 10, guests can enjoy an exclusive menu designed by Raty and Nakamura, where the duo will present a luxurious dining experience with courses prepared with ultra-premium ingredients imported directly from Tokyo’s famed Tsukiji fish market, pushing the creative limits to channel the full potential of prized Japanese ingredients through fresh harvests such as sea urchin and abalone.

The four-hands lunch menu is priced at HK$1,988 per person, and dinner is HK$3,888 per person.
