Sample one of France’s most revered delicacies at Gaddi’s, where Chef Rémi van Peteghem and his team will present poularde en vessie. Traditionally, the dish features a whole hen poached inside a pork bladder – an age-old cooking process to retain moisture.

In an exciting culinary twist, Chef Rémi has added his own ingenious spin to this iconic dish.

Gaddi’s specifies delicate free-range hens reared on milk and herbs in Northwest France for this special menu. After a tableside presentation, the aromatic first course of chicken is served, boasting sliced black truffle under the skin, perfectly-cooked gnocchi and a creamy truffle and chicken stock reduction. A 12-hour confit of the crispy skin chicken leg is followed by a rich consommé with its offal in ravioli are the final highlights of Chef Rémi’s tribute to this supreme French delicacy.

An exclusive treat, only two bookings of the chicken per day will be available until 20 December 2015, priced at HK$2,688 per serving (serves two guests) plus 10% service charge. Five business days advance order required.
