The founder of one of Japan's most famous cafes shares his opinion on great coffees

In December 2015, we broke the news on the opening of Omotesando Koffee in Hong Kong. While the opening date was delayed from its initial projection of March, the famous Japanese café opened its doors two weeks ago at Wan Chai’s Lee Tung Avenue. Hong Kong Tatler caught up with Eiichi Kunitomo, the founder of Omotesando Koffee, who shared with us the keys to making the perfect coffee.
Founded five years ago in Japan, Eiichi Kunimoto opened Omotesando Koffee in Tokyo’s Omotesando area. Located within an old building, the stylish coffee house became an instant sensation, where espresso-based drinks and hand-drip coffees were served, together with a number of snacks to complement the brews.
The iconic café closed at the end of 2015 – sad news for those in Japan but thrilling for us in Hong Kong. In the above video, Eiichi Kunitomo tells us what he thinks makes the perfect cup of coffee.
