Originally from Sweden, the award-winning and progressive chef is W Hong Kong’s director of culinary, and has over 30 years of experience working in France, Denmark, Dubai and his native Sweden, before touching down in Hong Kong. What’s more, Nilsson has the seal of approval from the Swedish royal family, having served as their guest chef; he was also the chef-in-charge for the Nobel Prize Banquet for several years.

Nilsson has assembled a unique menu that features some of the greatest hits from around the world. On the seafood front: start with a couple of oyster shooters with champagne, diced apple, chilli, cucumber and guava foam or, if you prefer something with a tad more tang, the oyster shooter with tomato juice and vodka, before going onto the classic lobster Thermidor. Other favourites include a piquant piri piri barbecue chicken with French fries, lettuce and tomatoes; umami braised beef brisket with sticky soy glaze; and the crisp vegetable tempura, dashi broth with daikon and ginger oroshi. Diners can also expect all-time brunch favourites such as spider crab legs; mini burgers; margherita pizza; scallops; lobster salad; karaage chicken; and shrimp popcorn with spicy mayo. If you’re still ravenous after all that, then the seafood pasta and beef tartare live stations may satiate your appetite.
