From now until April 17, green tea aficionados can enjoy delicate morsels made with the beloved beverage

Celebrated for its pure taste and refreshing aroma, green tea has also been lauded for its health benefits thanks to its high concentration of antioxidants. Its versatility is celebrated in cooking as the tea can be infused into desserts from mousses to cakes. This season, Café 103 of Ritz Carlton Hong Kong is celebrating the ingredient in a new green tea afternoon tea set, available for tea aficionados.

The hotel’s executive pastry chef Richard Long has prepared an array of sweet and savory treats showcased in the tiered afternoon tea set.  Guests can indulge in Swiss roll with vanilla blue crab salad, cream cheese mini cake with Scottish smoked salmon, and Waldkorn sandwich with black truffle organic egg salad.

Chef Long and his team of pastry chefs are also keen on pairing green tea with fruits, in bite-sized desserts such as green tea raspberry (green tea mousse with raspberry coulis), mandarin verrine with green tea crumble, and green tea raisin scones served with raspberry jam and clotted cream.

Other green tea delights include a French-inspired matcha canele, green tea macaron and green tea and red bean choux.

The Green Tea Afternoon Tea Set is served at Café 103 from now until April 17. The tea set is priced at HK$378 for one and HK$608 for two from Monday to Friday, while HK$398 for one and HK$628 for two on Saturday, Sunday and Public Holidays. From March 25 to 28, the tea set is priced at HK$398 per person and HK$728 for two.
