Award winning chef to prove that green cooking can be delicious during special event

The Collective’s Table series challenges the city’s gourmet heavyweights to cook greener and healthier alongside the Grassroots Pantry’s very own executive chef Peggy Chan. First up is chef Richard Ekkebus of Amber fame who has accepted chef Peggy’s challenge to create a stunning menu of only vegetarian elements. On June 20, the two will combine forces for a joint six-course tasting menu inspired by Chef Ekkebus’ signature contemporary French style.

Each of the chefs will alternate courses in a match of culinary ping pong. Chef Ekkebus will be plating up a beautiful Delicatess Potatoes, served as a salad with green olives, to which Chef Peggy will respond with an earthy mushroom marrow. For the main course, Chef Ekkebus will be cooking Amber’s white asparagus charred with white miso. Not to be outdone, Chef Peggy will be serving exquisite buckwheat ravioli served with locally sourced greens and walnut Parmesan. Fans of dessert need not be deterred by this all-green and health conscious menu. Chef Ekkebus will be finishing the meal with a dessert of heirloom carrots served with a vibrant confit with orange blossom honey and a refreshing blood orange sorbet, while Chef Peggy will get the final say with a jackfruit posset paired with raw chocolate cigars

This special event will take place on June 20 and is priced at HK$880 per person with an additional choice of wine pairing at HK$380 per person. If you fail to snag a spot on the night, fear not — the menu will run during dinner from Tuesday to Friday after the event for $680 per person.

Next up to bat in this innovative series will be chef Vinny Lauria of Linguini Fini who will cook at Grassroots on Monday, June 27.
