Chef Edwin Tang prepares the forest’s seasonal treasures for six signature courses

Celebrated for their health benefits and unique earthy flavours, Yunnan mushrooms are reaching its optimum freshness, as chef Edwin Tang of Cuisine Cuisine is preparing a range of creative dishes that focus on these seasonal ingredients’ versatility. Grown in mountainous regions of China, the season’s best mushrooms include maitake, morels, and cordycep flowers, best prepared by chef Tang in his signature courses such as deep-fried white maitake and Bombay duck, flamed chicken with morels, baked lobster with fresh porcini and Portobello in black pepper, and sautéed M9 Australian wagyu beef chuck with black termite mushrooms and garlic.  The selection of mushroom dishes is priced starting from HK$228 per course.
