The start of a new year is the perfect time to shake things up – advice that Sheung Wan restaurant Bibo is taking to heart, with the launch of an exciting revamped menu for 2017.

Set in a vibrant space that showcases contemporary art from the likes of Banksy, Damien Hirst, Basquiat and the King of Kowloon, Bibo guarantees an elevated fine dining experience that truly sparks all of your senses. Executive Chef Mutaro Balde continues to push the boundaries of haute cuisine with creative new dishes that utilise the finest produce from around the world, and are as much a feast for the eyes as they are for the palate.

Start your meal with a brace of new appetisers, including Les Coquilles Saint Jacques de Normandie, which features French scallops and celery risotto, served with a hot broth, crispy brioche and generous shavings of fresh truffle.

Seafood lovers should not miss Les Crevettes Carabineros, a decadent umami-rich showstopper of Spanish prawn carpaccio served with Baeri caviar, prawn head extract and cauliflower puree.

The culinary fireworks continue with Bibo’s stunning new main courses. Le Boeuf de Miyazaki is a carnivore’s dream, showcasing top-grade Japanese Miyazaki Wagyu beef, charcoaled to perfection in the restaurant’s Josper grill and served with seaweed-roasted potatoes, crispy chips and a choron sauce. For something a little lighter, opt for Le Bar de Ligne de Quiberon, which stars wild seabass pan-fried and glazed with mandarin juice, served with gnocchi, chards fricassee, chestnut and Bellota ham – a vibrant combination of flavours and textures that pops off the plate.
