The Cantonese restaurant at Renaissance Harbour View launches new seafood and wine pairing menu

This summer, South African abalones take centre stage at Dynasty, Renaissance Harbour View Hong Kong’s Cantonese restaurant, as the establishment launches a seafood menu featuring pairing of wines from South Africa. Highlights in the South African abalone menu includes cold appetisers such as cold-diced South African abalones salad flavoured with shrimp and crabmeat, and cold shredded South African abalone in plum sauce accompanied with sesame ice plants; both dishes are best paired with Klein Constantia Metis Sauvignon Blanc 2016. Nourishing soups come highly-recommended at Dynasty, with new soups such as double-boiled whole coconut soup with abalone and minced pork dumpling, and chicken soup with South African abalone flavoured with pork bone marrow. Main dishes such as include pan-fried fresh South African abalone in superior soy sauce; sautéed sliced fresh South African abalone with asparagus in black truffle paste; and braised whole Yoshihama South African abalone with superior oyster sauce.
