The Cantonese restaurant from Renaissance Harbour View Hotel showcases an exclusive array of abalone dishes

In celebration of Wines of South Africa Month, Dynasty of Renaissance Harbour View is presenting a wide range South African abalone dishes to be paired with beloved wines from the country. Guests can sample chef Suen Kam-Sing’s cold shredded South African abalone in plum sauce as a starter, followed by signatures such as steamed whole abalone in sauna style with jasmine tea, braised whole 10-head South Africa abalone in oyster sauce, as well as best-selling favorites in the likes of poached sliced South Africa abalone with fresh clams in homemade seafood soup, as well as sautéed slice South Africa abalone with dried shrimps in X.O. chilli sauce.

The new abalone delicacies will be paired with a range of South African labels, notably including Old Vine Chenin Blanc, Raats Family, Stellenbosch 2013, as well as Ernie Els, Sauvignon Blanc, Stellenbosch 2016, among others. Dynasty’s abalone dishes will be available from now until May 31. Al South African wines are available for pairing, priced starting at HK$95 per glass and HK$400 per bottle.
