Celebrate the abundance of dried seafood delicacies with pairing of California wines at Renaissance Harbour View Hong Kong’s Cantonese restaurant

This summer, as part of Renaissance Harbour View Hong Kong’s California Wine Month celebration, Dynasty is showcasing an array of dried seafood delicacies, paired with prized wines from California. Guests can indulge in the unique braised whole Yoshihama South African abalone with superior oyster sauce, ranging from 27-heads at HK$418 per person and 19-heads at HK$850 per person, together with an exclusive stewed whole 25-heads fish maw with goose web. The dried seafood dishes are best paired with California-produced bottles such as Orin Swift Abstract 2018, whose dark plum and ripe berry notes match well with the dishes’ umami-rich homemade oyster sauce.

Other delicacies include baked crab shell stuffed with crab meat with onions; pan-fried king scallops with vegetables in gravy; and double-boiled whole coconut soup with matsutake mushroom and sea cucumber. Dynasty’s premium dried seafood extravagance is available from now until September 30, 2020, while selected California wines are available throughout the months of July and August.
