The esteemed chef is set to present Tuscan dishes for a two-night wine pairing event with an all-new menu throughout the month of May

This summer, celebrated Italian chef Enrico Bartolini is returning to Spiga to present his brand new ‘Taste of Italy’ menu. From May 18 to 22, Bartolini will be present at the Central restaurant to present his seasonal and ingredient-focused dishes. The Tuscan native will also be showcasing a unique wine dinner event on May 21.  
 
On May 21, Bartolini and Maurizio Severgnini, head sommelier at Spiga, will design and craft a unique four-course dinner menu, presented with a worldly selection of sparkling wines including Bollinger champagnes and a few others from Italy, France, and Japan. The Italian culinary maestro will showcase his home region’s dishes beginning with roasted octopus with aubergine and tomato broth, followed by risotto with courgetti flowers, langoustine and herb sauce, as well as a rosemary and pepper-crusted seabream with asparagus as a sumptuous main course. The four-course dinner concludes with a simple dessert of pear, chocolate and cherry blossom scent. Each course will be paired with Severgnini’s choice of sparkling wines for the limited event.
