The contemporary French restaurant launches a special menu featuring the esteemed premium beef this season

This Spring, Epure is welcoming the new season with premium beef cuts from artisanal butcher Alexandre Polmard. Polmard’s family business was founded in 1846, and is now under its sixth generation. Their beef comes from free-range cattle of the Polmard family far in Saint-Mihiel, France, where cattle is raised with tailored organic diets, and the beef cuts are dry-aged with controlled conditions to ensure quality.

Epure’s executive chef Nicolas Boutin will be using various cuts of the premium beef in a new four-course menu, available during dinner service from now until April 30. The exclusive menu is priced at HK$1,288 per person, with an additional wine pairing option at HK$310 for two glasses and HK$620 for four glasses.

Diver scallop with beef ‘chitterling’, garden leaves and ‘Ravigote’ vinaigrette

Beef patty ‘Parmentier’ with smoked potato mousseline and morel

Beef extra steak with Pommes Anna ‘Style’ potato, mesclun leaves and Jean Louis Francois Collinet inspired sauce
