Served exclusively at the restaurant for two months, executive chef Nicolas Boutin will feature France’s beloved crustaceans in a seasonal culinary showcase

Celebrated for its distinctive blue hue of its shell and succulent, rich flavour, blue lobsters harvested off the coasts of France, from Brittany to Normandy, are regarded as the premium seasonal catch in the world of gastronomy. These revered crustaceans are set to be featured in Épure’s summer exclusive dinner menu. From July 3 till the end of August, the French restaurant’s executive chef Nicolas Boutin will prepare the prized shellfish in a variety of ways, presented in his creative four-course dinner menu, notably beginning with blue lobster with rock fish consommé, saffron and rouille as an amuse bouche, blue lobster with avocado, haricot and Australian black truffle, followed by blue lobster with pickled girolle mushrooms and Paloise sauce, blue lobster with Cevenne onion, black truffle and tarragon as main course, as well as maize with buckwheat, dulcey and lemon as dessert. The limited edition blue lobster menu is available for dinner and is priced at HK$1,688 per person.
