Harbour City’s fine dining establishment has teamed up with Laurent-Perrier to present an exclusive four-course menu

White truffle season is upon us, and this November, Épure is launching a month-long celebration of the prized ‘white diamonds of the kitchen’ with an exclusive new menu created by the establishment’s executive chef Nicolas Boutin, paired with Laurent-Perrier champagne.

At its peak throughout autumn, white truffles are celebrated for its unique earthy aroma unlike any other ingredient. Harvested in the forests of Piedmont, Italy, the world’s finest white truffles embellish the notable signatures at Épure, beginning with organic farm egg omelette soufflé with Cevenne onion, garden leaves and white Alba truffles. Boutin’s playful way of pairing white truffles with scrambled egg is exemplified in an airy omelette soufflé accented with Parmesan cheese and a touch of sweetness from Cevenne onions.

Chestnuts, another autumn essential ingredient, is the key to Boutin’s ravioli, paired with Swiss chard, wild mushrooms, a roasted garlic broth and white truffles for an enhanced earthy treat. Young female Bresse chicken ‘Mieral’ with Jerusalem artichoke, Mereville watercress, supreme sauce and white truffle takes the spotlight as main course in Épure’s white truffle menu. The succulent well-marbled chicken breast is paired with the bird’s confit leg, enhancing textures that pair well with Jerusalem artichokes and watercress, both of which are in season in France.

Created and crafted by resident pastry chef Ken Thomas, Épure’s four-course menu is rounded out with Conference pear poached with jelly, citrus zest, Tahitian vanilla and crunchy meringue. Inspired by the crispness and fine bubbles of the elegant Laurent-Perrier champagne, the refreshing dessert balances the sweetness of vanilla and pear as well as light acidity of the citrus zest, with similar sensation brought by the fine Laurent-Perrier Brut Rose paired with this dessert.

Épure’s four-course white truffle dinner set is available throughout the month of November, and is priced at HK$1,988 per person, with an option to add additional white truffles at HK$98 per gram. Guests can also order an extra glass of Laurent-Perrier Brut Rose for HK$290 or a bottle at HK$1,350 with purchase of the exclusive seasonal menu.
