In July and August, the champagne house presents a rare opportunity to sample their newest Collection du Chef de Caves

It’s not every day that the House of Mumm Champagne re-releases 30-year-old champagnes for the public to enjoy, but as part of their new Collection du Chef de Caves, cellar master Didier Mariotti presents three vintages that highlights the consistency and ageing potential of Mumm Vintage Champagnes.

A limited quantity of the Cordon Rouge Millésimes of 1985, 1990 and 1996 will be available in July and August at Bibo’s exclusive seven-course pairing menu, with dishes to include: 

- Oysters served over lemon granitée and champagne sabayon; paired with GH Mumm, Blanc de Blancs, Mumm de Cramant NV
- Bresse chicken foçon blanquette with seasonal mushrooms; paired with GH Mumm, Collection du Chef de Caves 1990
- Pan-fried Brittany quail, gratin dauphinois, apricot glaze and coffee emulsion; paired with GH Mumm, Collection du Chef de Caves 1985
