Hong Kong is undeniably food obsessed and, every so often, a new dish or trendy ingredient will take the city by storm. Some are good and some are, well, let's just say it's better to look ahead. 

Social media influencers from across the globe have declared this season to be “tomato girl summer”. Think easy, breezy, Mediterranean vibes and alfresco lunches, featuring one of the world’s most beloved summertime ingredients: the tomato.

In this edition of Food Obsessions, we're looking at this wonderfully fresh and flavourful fruit, of which there are 20,000 different varieties, and have listed some of Hong Kong's top tomato-centric dishes that showcase the tomato in the best way possible, in its true form and for its untapped potential.

Ramato

When it comes to showcasing the humble tomato's charm, Ramato—which is named after the Ramato tomato—offers a great example of doing the fruit justice. Their signature dish: the spaghetti Ramato includes housemade dry durum wheat pasta which dances with the full-bodied flavour of sun-ripened tomatoes, transforming a seemingly unassuming dish into an aria of flavour, punctuated by the fragrant whisper of fresh basil. This dish, while embracing simplicity, demonstrated that culinary elegance sometimes lies in the least complicated of presentations.

Go all out on tomatoes at 22 Ships, starting with their signature pan con tomate, a combination of rustic bread, ripe tomatoes and a brush of garlic, before washing it down with sparkling housemade tomato and thyme soda which blends tangy tomato and aromatic thyme. Censu

At Censu, tomato appreciation is taken to new heights with the hamachi with tomato ponzu and semi-dried tomato dish. Tomatoes are made into a tomato ponzu and semi-dried to enhance the sweet, buttery base of hamachi. The bright, tangy ponzu cuts through the richness, while the addition of the dried tomatoes, brings a concentrated burst of tomato flavour.

Roganic uses Taoyuan Province tomatoes served alongside Porlock Bay oyster cream, with juices infused with marigold. Feuille's tomato, strawberry and longan dessert is an exemplification of their zero-waste ethos, which spotlights the tomato in an innovative sweet ensemble. Each element of the fruit—from juicy pulp to nutrition-packed skin and seeds—is utilised and incorporated. Syrup-drenched, dried cherry tomato candies deliver a sweet explosion, while a refreshing tomato granita, veiled in a velvety longan espuma ensures a unique blend of flavours.
