The Harbour Grand Kowloon hotel's Japanese restaurant presents a special seasonal menu of fish cured using the traditional Itiyabosi method

Get a taste of authentic Japanese Itiyabosi at Robatayaki. Itiyabosi is a traditional Japanese method of preserving, where fish are soaked first in salt water and then air-dried for one night so that its natural flavour and essence are kept under the dried skin. Diners can enjoy Itiyabosi of karei (Japanese flat fish), kinki (Channel rockfish), kinmedai (Golden Eye snapper) and saba (mackerel) at Robatayaki, where they will be finished on the grill for a unique and memorable dining experience.
