Chef ThiTid Tassanakajohn, more popularly known as chef Ton, will be presenting signatures and brand-new plates from his famed Bangkok restaurant Le Du at the newly-reopened Mandarin Oriental

After winning the accolade of Asia’s No. 1 Restaurant from Asia’s 50 Best Restaurants earlier this year, the team at Bangkok’s one-Michelin-starred Le Du will head down to Singapore for Mandala Master’s latest culinary residency from November 1 to 12. Supported by VP Bank, Mandala Club is collaborating with Mandarin Oriental Singapore to host Le Du’s 26-chef brigade, led by chef-patron ThiTid Tassanakajohn, more commonly known as chef Ton. 

The residency comes after a string of highly-anticipated engagements by world-renowned restaurants, including Mirazur, Narisawa, Central (which emerged as the World’s No. 1 Restaurant from World’s 50 Best Restaurants 2023), and most recently, Indian Accent. The dining experience is set to be an explosive one, with chef Ton’s bold contemporary European cuisine infused with Thai flavours set to shake up Singaporean palates for two weeks.

Take, for instance, Ton’s signature lobster with shrimp paste for a powerful umami, or the jor-rang curry. Guests will also be treated to three brand-new dishes as a sneak peak to Le Du’s new menu in Bangkok, including fresh seafood like amadai served with cauliflower and Issan herbs, or Japanese Wagyu with a spicy northeastern Thai-style sauce. Traditional flavours such as a coconut and palm sugar dessert will also delight in the menu. With a constant eye on sustainability, most ingredients will be sourced from local farmers in Thailand.

Ton, who boasts two restaurants in the top 5 of Asia’s 50 Best Restaurants 2023 (his Thai family-style concept Nusara is No. 3 on the list), also owns Niras in Hong Kong, where foodies and critics have been raving about his explorations of Thai cuisine. He will be hosted in Singapore at Dolce Vita, situated within the newly-reopened Mandarin Oriental Singapore, which has recently finished its six-month renovation. Phillipp Knuepfer, general manager of Mandarin Oriental Singapore and area vice president operations, spoke of his excitement co-curating “an immersive realm” where “luxury and lifestyle intertwine[s]” and where “discerning gourmands” can “revel in the blend of heritage and culinary finesse”.
