The Sai Ying Pun pop-up space is welcoming Israeli chef Gal Ben-Moshe from Berlin’s Glass restaurant for four nights in 2017

Test Kitchen is a space to watch—in 2016, they’ve been quietly hosting a number of forward-thinking chefs, from Victoria Elisadottir (Dottir, Berlin) to Toni Toivanen (Noma, Denmark) who have cooked inventive multi-course menus paired with wines. To kickstart the 2017 season, they’ve got chef Gal Ben-Moshe from Berlin’s Glass restaurant to present his take on Arabic cuisine. 

Ben-Moshe, who has worked in Chicago’s Alinea and London’s Maze and Hibiscus, opened his own restaurant in the German city four years ago to present the food of his upbringing in a high-end format. Glass has since become known for its creative techniques and surprising flavour combinations borrowing from Lebanese, Syrian, and Palestinian culinary traditions. 

At the Test Kitchen pop-up, you can expect ingredients such as hearts of palm, spices such as cumin, and sheep yoghurt to feature on the ten-course menu, which will be paired with wines (both French and Israeli) curated by Corney & Barrow. 

The dinners will take place between January 12 and 15, and there will be two seatings starting at 7pm and 8:15pm. The menu is priced at HK$1,280 per person inclusive of wines.
