This April, the Italian restaurant of Grand Hyatt Hong Kong delights guests with catches from Northern Italy’s celebrated markets

Italians love seafood as much as the Chinese, preferring to purchase the day’s freshest catch from the fish markets, where the best crop from the ocean are displayed and sold. This April, Alessandro Cozzolino, chef de cuisine of Grissini of Grand Hyatt Hong Kong is preparing a rich array of Italian seafood dishes featuring some of the best from Genovese fish markets. 
 
Simple execution is all it takes to enhance the freshness of the lively specimens imported straight from the fish markets of Genoa, with chef Cozzolino preparing a selection of dishes showcasing the prime quality of market fare, notably including: 
 
- Grilled Verace octopus, potato, chilli and caper sauce 
- Acquerello risotto, squid ink, roasted baby squid, and Stracchino cheese 
- Sea-salt baked Genovese sea bream with cream potato and Portofino lemon olive oil 
 
Grissini’s Genoa seafood dishes are served during lunch and dinner services and are available throughout the month of April 2016.
