Haku Launches New Autumn Tasting Menu
This autumn, Harbour City’s Haku is celebrating Japan’s seasonal harvest through his new seasonal tasting menu. Inspired by Spanish and Mediterranean cuisines, Agustin Balbi’s creations fuse influence from his roots and Japanese culinary traditions, presented in the form of an 11-course degustation menu.
Each course of Balbi’s seasonal menu features one central ingredient, harvested from Spain and different region of Japan such as Spanish carabineros and bacalao (salt cod) as well as abalone, wagyu, and lobster from Japan. Menu highlights also include steamed king crab with finely cut hime turnip, kabosu pieces, and chopped cilantro and chives; pan-seared foie gras, shaved chestnuts, with wild mushrooms, Pedro Ximenez vinegar and grilled gingko nuts; and dessert prepared with cream cheese, persimmon marmalade, milk ice cream, Grand Marnier and orange zest.
Haku’s new 11-course autumn menu is priced at HK$1,480 per person.
