Typhoon season is here, and with it comes the eternal churn of restaurants opening and closing in the sea of Hong Kong's restaurant space. Chef Nathan Green Departs Henry To Head Up Rex Wine & Grill

Having overseen the grills at Rosewood Hong Kong's resident steakhouse since its launch in late 2019, chef Nathan Green has left Henry to join Umberto Bombana's stable of noteworthy chefs at Octavo Management Group, which includes the likes of Octavium's Roland Schuller, Bjoern Alexander at the soon-to-open Venédia, and Wong Yiu-por at Nove. His new role will be to direct the launch of Rex Wine & Grill, an Italian-American chophouse that will take over the basement of the One Chinachem Central building. Specialising in steak, smoked brisket, sausages and other barbecue dishes, Rex promises to be an opulent dining experience that brings together Green's extensive experience at Henry, Rhoda, and 22 Ships. Louise Marks 2nd Anniversary With Menu Inspired By Career Of Chef Franckelie Laloum

Now two years old, Louise is celebrating its second birthday with a gastronomic look at the life and career of executive chef Franckelie Laloum as part of a limited-edition menu. Taking place on June 18 and 19, the menu consists of five dishes that pay homage to the many chefs he has worked under: a dish of Hokkaido sea urchin, slightly smoked egg yolk, sorrel jelly and white asparagus was inspired by Chef Anne-Sophie Pic at three-Michelin-starred Maison Pic; the slightly poached "Guilvinec" langoustines with snow peas, lemon confit and Kristal caviar is dedicated to Bruno Oger of two-Michelin-starred La Villa Archange; and Julien Royer of Singapore's Odette is name-dropped as the inspiration for the Mieral Kampot pepper-crusted pigeon. The menu is priced at HK$1,888 with 10 percent service charge.

La Paloma Invites Chefs To Create Cross-Cultural Fusion Paellas

What is Hong Kong if not a melting pot of cultures? It's fitting, therefore, that the paella—widely regarded as Spain's national dish—has been reinvented at local restaurant La Paloma, which has invited a host of fellow chefs to apply their cultural backgrounds to this show-stopping rice dish. As part of La Paloma's Hot Wednesdays series, chef Alex Fargas will partner with the likes of Mukogawa Satoru of Sushi Kuu, Max Levy of Okra, Que Vinh Dang of Nhau, and more to bring a diverse range of palates from as far afield as Peru, Japan and Vietnam to the humble paella. The Hot Wednesdays series will take place every fortnight beginning on June 9, at the price of HK$398 for one fusion paella and three tapas dishes.

In conjunction with the ongoing Art Karnival, K11 Musea is introducing a range of F&B offers to tie into the various artworks and sculptures on display for the month of June. Using the themes of ‘roses and florals’, ‘edible flowers’ and ‘abstract splash plating’, a number of cafes and restaurants—including Fortnum & Mason, Artisan Lounge, Yung's Bistro, Cobo House, Soil to Soul, and Tirpse—are creating special dishes and drinks that can be redeemed by scanning the QR codes at the base of selected artworks throughout the shopping complex. From a Bavarois ring pastry at Artisan Lounge to a dish of seared eel in toasted sesame sauce at Cobo House, finding each art-inspired bite is a treasure hunt in itself.

Mother Pearl Pops Up At The Upper House

Following in the footsteps of Matchali and Honi Honi, Mother Pearl is the latest to take over the pop-up cafe concept in The Upper House. From now until August 31, the homegrown vegan bubble tea brand will be serving their signature plant-based drinks—such as the Hong Kong-style milk tea-inspired Yuen Yeung 2.0—alongside The Upper House-exclusive affogato with vegan Happy Cow ice cream. On June 12, Mother Pearl will also host a somatic singing bowl meditation session with iLiving that will end with a guilt-free bubble tea refreshment—that's one treat that we can approve of.

Sunday's Sessions Return To Co Thanh

Sunday's Grocery, the sister distribution brand of Yardbird and Ronin, is bringing back its Sunday's Sessions, a bi-weekly pop-up series taking place at Co Thanh that will highlight one chef each time. Kicking off the series is Michael Janczewski, an alum of Belon and Ho Lee Fook, who will be serving spicy, northern Chinese snacks washed down with sessionable cocktails made using Sunday's Spirits and Fernut Hunter, prior to his imminent move to Shanghai. Expect some mouth-numbing bites such as Shaanxi eggplant salad, wontons in chilli oil, mala beef "taco", and hot oil Shaanxi noodles, all of which can be had for HK$270. Taking place on June 12 and 13 from 3pm onwards, pop by for a taste of the north and stay tuned for more news on upcoming Sunday's Sessions.
