Drinks maestro Angus Winchester will be holding a three-day preview of his New York opening at Quinary

(Editor's Note: The Embassy pop-up, originally set to launch May 15, will be postponed until further notice. Organisers have told Hong Kong Tatler Dining that they will announce the new dates soon.)

Hong Kong and New York clearly have a very special relationship, with a consistent trickle of bartenders and cocktail concepts from the latter making their way over to our shores every few months. Case in point: this May, we have the official launch of the Hong Kong branch of Employees Only, and Dead Rabbit’s three-day pop-up at Blue Bar.

What’s unusual about The Embassy, the third New York cocktail project to arrive in Hong Kong next month in collaboration with World Class, is that it hasn’t even opened in the Big Apple yet. The bar is slated to launch in the old Nassau Brewing Company building in Brooklyn this spring, and founder Angus Winchester has decided to do a preview run in Hong Kong for three days first.

The sneak peek will take place at Quinary in Central between May 15 and 17, which will see the bar transformed into what Winchester envisions as a luxurious hideaway to experience classic drinks inspired by his travels around the world. The takeover will recreate the brick façade of the Nassau brewery and its vaulted interiors, with an even more intimate space christened The Residence out back. This is where Winchester—who has been a bartender for over 29 years and is a former Global Ambassador for Tanqueray Gins—will personally craft a six-drink degustation for up to eight guests at a time.

Eight types of drinks will be available at The Embassy, such as Mr Hoshi’s Dry Martini, the Cecil Baker, and The Winchester.

The Embassy and The Residence will open at Quinary between May 15-17, from 5:00pm to 1:00am each night. Bookings for The Residence include the six-drink set menu at HK$500 per person.
