Chef Marco Mehr aims to impress with dishes featuring the earthy morsel from France

Hugo’s at the Hyatt Regency Hong Kong in Tsim Sha Tsui will be off to a good start next year with a two-month promotion featuring black truffles from Périgord, France. Marco Mehr, executive sous chef, is highlighting the luxurious morsel with an array of new dishes to be featured in the restaurant’s a la carte menu from January to end of February.

Best known as ‘black diamonds in the kitchen’, black truffles harvested from the Périgord region of France is considered the best quality truffles, revered by its irresistible aroma and earthy taste. Chef Mehr is presenting an array of dishes to bring out these qualities for truffle lovers. Notable truffled dishes include:

- Poached Spanish turbot with Périgord truffle, celery ragout, barley and fumet blanc
- Braised French veal cheek with Périgord truffle, parsnip, madeira, and truffle braising jus - Poached French organic egg with Périgord truffle, mashed potatoes and forest mushroom foam

The Périgord black truffle promotion runs for the months of January and February, 2016.
