The European restaurant at the Hyatt Regency launches seasonal delicacies prepared with the seasonal spears throughout the months of May and June

Celebrated annually during its short harvest season, Germany’s white asparagus is the best produce of the season and a great match with fine meats such as Spanish lamb. This season, Josef Gallenberger, Hugo’s German executive sous chef, is launching a series of hometown classics in Hong Kong. 

Available throughout the months of May and June will be season-exclusive dishes such as marinated German white asparagus with Iberico lamb chips, as well as marinated Iberico lamb belly tapas, and white asparagus foam soup with tortellini, Manchego lamb, foie gras and pine nuts. Gallenberger also designed new seasonal main courses such as grilled Iberico lamb rack with crispy asparagus, and whole Manchego milk-fed lamb shank a la Bourguignonne with white asparagus, carved and served featuring Hugo’s signature Gueridon tableside service.  Hugo’s white asparagus delicacies are available from May 1 to June 30.
