The elegant restaurant offers interactive dining experience showcasing sustainable seafood from all over the world – here’s what went down during its grand opening showcase

Located at the top floor of the new Tower 535 in Causeway Bay, Seafood Room, the city’s latest seafood restaurant is officially open, with a 8,000 square foot dining space and a 2,000 square foot rooftop bar, perched atop and surrounded by city lights and a harbor view. Ocean catches from around the world are imported daily and prepared with a range of international flavours.

Designed by Natalia Belonogova of Russia’s NB Studio Moscow, Bulldozer Group’s first restaurant in Hong Kong features an ocean-themed décor that matches the cuisine served. Guests are welcomed through a tunnel of green glass panels, revealing the spacious dining areas that seat up to 190 and more than 40 at the terrace. The extensive use of wood complements the space, adorned with artwork by celebrated artists such as George Condo, Takashi Murakami and Hollywood actor Adrian Brody.

Taking helm of the Seafood Room kitchen is executive chef James Cornwall, previously at London’s J Sheekey. At the new restaurant chef Cornwall aims to present honest seasonal cooking that accentuates the prime quality of ingredients, notably, sustainable seafood from around the world. Inspired by International cuisines and prepared by experienced chefs, Seafood Room brings a collection of signature dishes, including:

- Langoustine tartare with avocado, truffle and caviar
- Warm octopus with potato, capers and smoked paprika
- Miso salmon with lime
- Salt-baked sea bass
- Yuzu tart with toasted meringue and green tea ice cream

After being greeted by mermaids, guests made their way through the ocean-inspired décor and installations, celebrating the opening of the restaurant over unlimited champagne and seafood canapés and dancing to live band performances. Distinguished guests attending the party include:  Hollywood star Adrien Brody, Reyna Hariela, Olivia Lee-Davies, Carol Yau, Charles Yang, Fanny Sieh,Olivia Croucher Buckingham, and Feiping Chang.
