Tatler Dining Kitchen: Interval Returns To Central In A Pop-Up With Coffee Collective
Having wrapped up a series of one-night-only pop-up events in the month of May with figures from our inaugural Tastemakers list, Tatler Dining Kitchen at Haus is getting ready to welcome in the next round of month-long partnerships, beginning with a coffee bar pop-up with Interval and Coffee Collective.
Taking over the ground floor space that temporarily housed JIA Group's Between previously, Interval's newest location is a homecoming for the brand, which originally opened in Central by Caleb and Josh Ng of Twins Kitchen and expanded this year to Cyberport and Lohas Park. It also marks the first time that Interval has collaborated with Coffee Collective, a Copenhagen-based micro-roastery known for its strong focus on sustainable practices and direct relationships with coffee bean farmers around the world.
The collaboration introduces Coffee Collective's beans to Hong Kong: the light and creamy Kieni from Kenya, the balanced Jaime from Colombia, Bolivia's organic Buena Vista, and the intensely aromatic Takesi Geisha. After picking their beans, guests can choose between an espresso or filter roast—for the latter, a trio of brewing methods are available, including cold brew, iced drip, and most unconventionally, the insta-chill pour-over, whereby hot, freshly brewed coffee is poured into a bath of dry ice to instantly chill the drink, sans dilution.
Interval will also be serving food in the form of Danish smørrebrød (open-faced sandwiches) in smoked salmon, blue cheese, pickled anchovy, and beef brisket varieties. On the sweeter side of the menu, Coffee Collective's signature soft-serve espresso ice cream will be available, alongside a Basque burnt cheesecake and a limited number of canelés baked fresh on the daily. Meanwhile, those looking for a spot of day-drinking will find it in the concise selection of German wines, as well as a low-carb lager from Hong Kong's Good Beer Project.
Open from 10am until 6pm from Monday to Saturday, the Interval x Coffee Collective pop-up will run until the end of June.
