The acclaimed chef of Singapore’s Odette will collaborate with resident chef de cuisine Ricardo Chaneton in a two-day culinary showcase

Celebrated for creating dishes that preserve flavours and textures with masterful techniques,  chef Julien Royer of Singapore’s Odette will be heading Hong Kong this December for a two-day gastronomy showcase at Restaurant Petrus at Island Shangri-La. The acclaimed chef will collaborate with the restaurant’s own chef de cuisine Ricardo Chaneton, creating an eight-course dinner tasting menu.

On evenings of December 15 and 16, chef Royer will join hands with chef Chaneton to create dishes with best-quality ingredients. The eight-course ocean-themed set dinner menu will showcase vibrant courses such as:

- Hokkaido uni, scallop tartare, oscietra caviar
- Langoustine, Jerusalem artichoke and bergamot
- Crispy-skinned kinki, charred pork belly and miso caramel
- Abalone, veal tendon and sticky yuzu sauce
- Sea lettuce with white chocolate textures

The Julien Royer – Ricardo Chaneton collaboration menu is priced at HK$2,280 per person and is available during dinner service on December 15 and 16.
