There is no better season to enjoy cakes than summer, where seasonal fruits are in abundance. This summer, pastry chefs all over town are launching an intriguing array of new cakes and sweet treats, from whole cakes to individual delights. Here are our favourites for the season.

Aside from running a full afternoon tea spread at Butterfly Room, pastry chef Holger Deh also leads a brigade of pastry chefs in creating a selection of new cakes for the season, including an individual portion of the hotel cake shop’s signature black forest cake. Yet it is the fresh cherry tart that won our hearts. Buttery flaky pastry crust holds a thin layer of almond financier base with a brushing of cherry jam, followed by a neatly-arranged layer of halved fresh cherries with shelled pistachios. The sweet tart is one of many more new individual cakes to be launched on June 12. Cake orders are best ordered in advanced at Rosewood Hong Kong’s online boutique here

Inspired by the summer sunshine and the vibrant blooming of the season’s best blossoms, Francois Delaire, executive pastry chef at The Peninsula Hong Kong, created the seasonal Chamomile Cake. Shaped like a blooming flower, Delaire’s new creation infuses the popular tisane in his cake, where sweet white chocolate mousse is offset by a tangy apple and lime compote with vanilla, followed by a topping of chamomile curd filling and condensed milk chamomile jelly on top. The new chamomile cake requires three-day advance reservations. Online orders can be made at The Peninsula Boutique online store

As part of the revamp of their cake menu, Mandarin Cake Shop’s classic cake varieties are reinvented with a stylish new look along with a handful of new cakes added to the collection- crafted by the hotel’s pastry chef Christophe Sapy. While the hotel’s classic 1963 Mandarin Cheesecake is a timeless favourite of ours, the mango coconut cake is the perfect summer addition you cannot miss. A buttery sable biscuit crust topped with a creamy mango-coconut mousse, lightened with zesty lime, the cake is best shared among a few friends. Most of the cake shop’s whole cake offerings are also available in individual sizes available at the cake shop daily. Advanced orders can be placed online here.
