The restaurant group is taking a bold leap with their next project, which aims to modernise familiar Cantonese flavours

Soon after announcing the opening of Chifa Dumpling House later this summer, Pirata Group has swiftly followed up with the announcement that they will also be opening Madame Ching, scheduled to launch later this May on Star Street. The space was previously occupied by Balls, the group’s three-month pop-up restaurant. The new restaurant is set to be a contemporary Chinese eatery specialising in roasted meats, inspired by Hong Kong’s local culinary heritage.

Madame Ching will be managed by head chef Son Pham, whose previous tenure covers The Ocean. Among the restaurant, signatures will be traditional char siu (barbecued pork) and roasted goose served with pickles and home-style chutneys, and reinvented bites such as ma po chip and dip, served alongside a selection of creative cocktails inspired by Asian aromatics.  
 
The all-day dining eatery is set to open late May.
