Esther Sham’s restaurant transports guests to South East Asia this autumn

Star Street’s Maison Es is launching a new menu inspired by Southeast Asian cuisines. The new a la carte selection covers the region’s quintessential flavour boosters such as lemongrass, galangal, fish sauce, makrut lime, and chilli paste. Guests can look forward to dishes such as matsuba crab meat rice paper roll served with sea urchin, cucumber, avocado cream and fish sauce ‘air’; spanner crab meat with linguine and deep-fried soft-shell crab; Hokkaido scallop with cockles, coriander oil and whey sauce; Kagoshima chuck rib tartare with caviar, soft-boiled quail egg and red curry sauce; and Spanish red prawn with heirloom cherry tomatoes and tom yum froth. Other menu highlights include binchotan-grilled Japanese kinmedai served with sautéed conch, sugar snap peas and tomato crab broth; Spanish pork two-ways – confit cheek and seared rack served with bamboo shoots and bak kut teh jus; and yellow corn fritters served alongside charred baby corn, corn meal and truffle corn jus. The new a la carte menu is available now until November 4, 2020.
