The New Restaurants Opening At Tai Kwun You Need To Know

In 1995, the Central Police Station Compound (CPS) was declared as monuments by the Hong Kong government. For the best part of two decades, rumours of rebuilding and gentrification of the area waxed and waned, until The Hong Kong Jockey Club submitted a proposal to conserve and revitalise the architectural monuments, including the Central Police Station, Victoria Prison, and Former Central Magistracy. The original opening date of the revitalised compound was set for October 2016, but a wall of the former Married Inspectors' Quarters building collapsed, delaying the progress of the project, pushing the opening date to mid-2018. As Tai Kwun, the first phase of CPS, officially opens on May 29, featuring space for the arts, and public use, here is an exclusive preview of what restaurants you can look forward to trying out soon.
After opening a string of design-meccas such as Ophelia, J.Boroski, Iron Fairies and Dear Lilly, cocktail bar maverick Ashley Sutton is returning to Hong Kong with his next project, which is inspired by nature. Dragonfly, Sutton’s latest project at the CPS, is once again a collaboration with local restaurant group Dining Concepts. The new boutique cocktail lounge will spotlight his appreciation for American painter and blown glass artist Louis Tiffany, whose works will be incorporated into the interior design of the venue. Dragonfly is currently on renovation and is tentatively opening in July 2018.

Old Bailey is not the only new Chinese concept at Tai Kwun. Kee Club’s Christian Rhomberg is back on the scene with a new restaurant—the 8,000 square foot Madame Fu, which is billed as a multi-functional space that includes a restaurant with lounge, a bar, and private dining area. It occupies the top floor of the former Barrack Block. The space will be designed by Rhomberg himself. Guests can look forward to contemporary Chinese cuisine with a strong focus on Cantonese dishes, especially dim sum, as well as Western desserts and afternoon tea offerings. Madame Fu is set to open for lunch on May 29, with the grand opening date set tentatively for the end of June 2018.

Yenn Wong of Jia Group is set to open its group's third Chinese restaurant after Duddell's and Repulse Bay's Meen and Rice. Located in the JC Contemporary Building, a Herzog & de Meuron-designed structure inside Tai Kwun, the building blends colonial architecture with modern design. Old Bailey will be home to the traditional cuisine and time-honoured hospitality of Jiangnan province, which also covers regions such as Shanghai, Yangzhou, Hangzhou, Nanjing, and Suzhou. Celebrated for clean, light flavours, Jiangnan cuisine's focus on health and seasonal eating will be reinforced with an abundant use of pickles, fermented foods, and aged vinegars, present in a menu of unique dishes crafted by chef Wong Kwan-Man. Guests can indulge in the establishment's signatures such as ten treasure duck, mala Iberico pork xiao long bao, double boiled lion's head hand-minced pork meatball, and Longjing tea smoked pigeon.

Inspired and named after the celebrated French poet and playwright Paul Claudel, Café Claudel is the latest café concept from French Creations, which also operates bistro-style restaurants such as Pastis, Metropolitain, and Saint-Germain. Café Claudel’s stylish interiors are inspired by the charm of Parisian cafes in the 1920s, recreated by celebrated interior design company In Situ and Partners. Guests can expect a cosy ambiance to sit back and enjoy a relaxed afternoon at this new café.

The Chinese Library, Statement, and The Dispensary
Aqua group has just announced a brand new project at the CPS. A bundle of two new restaurants and one new bar are set to open under David Yeo’s restaurant group, which also owns Tsim Sha Tsui’s Aqua, and Hutong among others. In a true East-meets-West fashion, Aqua’s cluster of establishments will occupy the first floor of the historic Headquarters Block. Set for a September opening, the East wing of the space will be The Chinese Library, a regional Chinese restaurant showcasing dishes created with David Yeo's recipes. The restaurant will also showcase a display of Yeo’s expansive cookbook collection. On the opposite end, at the west wing of the space will be a contemporary British establishment named Statement, featuring contemporary British cuisine with inspiration from Hong Kong’s colonial heritage. Joining the two restaurants is The Dispensary, a lounge bar concept reminiscing Hong Kong’s glorious historical past, a concept echoed in its interior design.
