Chef Riccardo Catarsi at Conrad’s Italian restaurant delights with the seasonal earthy delight from Piedmont

 

At the peaking harvest season of white truffles in Alba, Italy, chef Riccardo Catarsi from Nicholini’s is launching a brand new menu, adapting the prized ingredients with his contemporary approach by pairing white truffles with seafood in his creation of pan-fried Hokkaido scallop, 47ºC, purple potatoes, salmon roe and sea urchin sabayon. Catarsi also showcases his new pasta creation in the seasonal menu, with homemade tortelloni with white truffles, foie gras, homemade parmesan milk and veal jus. The new creative takes on white truffle dishes are available on the a la carte menu at Conrad’s Italian restaurant, as well as featured on a four-course or six-course set menu, priced from HK$1,488 to HK$1,888 per person. The white truffle menu is available now until mid-December, 2017.
