Alan Or is a name to watch in the world of bread and pastry, and the new pop-up on Level 9 of the hotel will showcase his latest and greatest creations

The Ritz-Carlton Hong Kong is the latest hotel to announce a pop-up featuring their pastries and breads baked in-house, and we’re here for it. Whether it’s the Four Seasons pop-up pastry counter, Black Sheep Restaurants' Butter Cake Shop at Landmark, or LMO Freshly Baked by Richard Ekkebus that had its run during the Christmas season, we are loving the fact that hotels and restaurants are showcasing their baked treats and desserts in a far more accessible fashion. Perhaps buoyed by the trend of people baking their own breads and pastries at home (and quickly realising that it’s harder than it looks), the pastry pop-up seems here to stay.

The shop is helmed by the hotel’s chief baker Alan Or, who was part of the opening team back in 2011. Born into a family that ran a bakery, Or has dedicated his life and career to perfecting his breads; when he was only 19, he joined the Grand Hyatt Hong Kong as a commis III, before moving onto the Regal hotel group as chief baker. In 2005, HOFEX held its first ever live baking competition and representing Hong Kong was, of course, Or. Throughout his career, Or has been dedicated to the pursuit of creating breads using homemade dough starters. For example, his French baguette at The Ritz-Carlton is formed from a combination of three different dough starters, each with their own purpose: one to form a fine crumb, one to give the dough a good lift, and one to lend just the right amount of tanginess.

A few months ago we were lucky enough to get a preview of Or’s latest creation, the laminated baguette. A combination of his famed French baguette and croissant recipes that results in the best of both worlds, the updated baguette has a delightfully crisp crust and soft, chewy crumb. The pop-up will also stock the signature croissants, muffins, small cakes and pastries as well as serve coffee and tea from 8:00am to 6:00pm daily. Pay a visit from now until 14 February 2021.
