The French restaurant at Island Shangri-La Hotel showcases an epicurean menu designed by chef de cuisine Ricardo Chaneton

To celebrate Le French Gourmay this year, chef Ricardo Chaneton of Petrus is creating a new set menu celebrating the unique flavours of Provence-Alpes-Côte d'Azur. Chaneton will showcase his innovative flavour combinations through dishes such as Mediterranean horse mackerel carpaccio with raspberry, green peas and kumquat vinaigrette; Alps brown trout, clams from Camargue and shellfish emulsion infused with vin jaune; as well as roasted bull billet from Camargue with morels ragout and fava beans. The four-course lunch menu is priced at HK$880 per person, while a six-course dinner menu is available at HK$1,580 per person. Reservations are available here.
