The French confectionery brand presents a new Hommage collection in a special tea set showcasing the seasonal pairing of chestnuts and pears

Afternoon tea lovers are no strangers to the seasonal collaborations between French confectionery brand Pierre Herme and the Ritz Carlton. This season, Café 103, the hotel’s all-day dining establishment will showcase the brand’s new Hommage collection in a limited-edition afternoon tea set featuring autumn-exclusive flavours.                 

Inspired by his mentor Gaston Lenotre, Pierre Herme embraces the smooth pairing of chestnut and pears in his new Hommage collection, matching flavours and textures in six varieties of sweets in this limited tea set, prepared by the brand’s executive pastry chef Takuro Osawa from Japan and the hotel’s executive pastry chef Richard Long. Notable varieties include: 

- Macaron infiniment poire (pear-flavored macaron)
- Macaron infiniment marron glace (candied chestnut flavoured macaron)
- Mont-Blanc hommage (with pear almond cream, meringue, chestnut Chantilly cream and pear compote)
- Emotion hommage (layered dessert featuring pear compote, pan-fried chestnut, soft cake and chestnut Chantilly cream)

The fine array of chestnut and pear desserts are matched with savoury tea morsels in the likes of sweetcorn and chicken salad mini soft bun, blue crabmeat with butternut, parsley and Waldkorn bread, and semi-dried tomato and chestnut cream cheese, gingerbread sandwich.

The Pierre Herme Paris Hommage afternoon tea set runs from October 1 to November 30. The limited tea set is priced at HK$398 per person.
