Renaissance Harbour View’s Chinese restaurant showcases classics and lunch specials during rugby season

This spring, Dynasty, Renaissance Harbour View Hotel’s Cantonese restaurant, is presenting a series of authentic signature delicacies crafted by the culinary team led by executive chef Suen Kam-Sing. Celebrated since the restaurant’s opening, Dynasty’s barbecued pork is made only with the pork collar, yielding an even fat-to-lean ratio and tender texture. Other outstanding classics include deep-fried lobsters in homemade sauce served with deep-fried buns, poached sliced abalone with fresh clams in homemade seafood soup, braised rice with whole abalone, diced chicken and mushrooms in oysters, as well as spotted garoupa poached in homemade superior soup, and tofu baked with minced pork and salted egg in ‘Taishan’ style.
