The prized delicacy is showcased in chef Olivier Elzer’s all new tasting menu celebrating the tuber’s harvest

Following the prized white truffle season come black truffles, which are regarded as ‘culinary black diamonds’ from France. Celebrated for its exclusive harvest from Perigord, France, contemporary French restaurant Seasons is showcasing the black truffle in its all new tasting menu, capturing the essence of the tuber in an array of fine dishes.

From now until February 28, chef Olivier Elzer is presenting his new creative takes on black truffle delicacies, featured in new four-course or six-course tasting menus, each course featuring the celebrated morsel from appetizers to desserts, notably including:

- Hokkaido sea urchin box with salmon tartare and truffle jelly
- Double chicken consomme with truffle infusion and Morteau sausage
- Roasted langoustine, celeriac ‘crème souffle’ and truffle butter
- Pigeon and foie gras, cabbage and Perigourdine sauce
- Truffled camembert cheese with walnut salad
- Cocoa and Gianduja entremet and truffle ice cream

Season’s four-course black truffle tasting menu is priced at HK$888 per person, and six-course menu is priced at HK$1,288 per person, both with a wine pairing options in three to five glass options, ranging from HK$398 to HK$598 per person.
