Hyatt Regency Shatin’s Chinese restaurant showcases dishes designed to awaken the taste buds

As humidity rises throughout summer, chef Ho Chun-Hung of Sha Tin 18 is launching a new selection of seasonal dishes to whet the appetite. Guests can indulge in a vibrant range of flavours, including Ho’s special selection of home-made sauces, including wild mushroom paste, made by cooking wild mushrooms with conpoy, dried shrimps, and Yunnan ham to enhance the umami, best exemplified in savoury dishes such as stir-fried cod with spring onions and wild mushroom paste. Guests can also sample chef Ho’s braised capon with abalone and Moutai wine, as well as pastry chef Kelvin Lai’s unique desserts, including preserved lemon and honey ice cream and chilled longan, wolfberries, brown sugar and ginger pudding.
