Shane Osborn’s Arcane Introduces Plant-Based Veganuary Menu This January 2020
After the expansive feasting of the winter holiday season, the new year brings the tradition of setting new goals and resolutions. With mindful and clean eating in mind, Shane Osborn is launching the Veganuary menu at Arcane this January, where guests can indulge in vegan delights created and crafted by Osborn himself and his chef de cuisine Michael Smith.
The menu is just one part of the sustainability campaign of Food Made Good, a programme advocating sustainable practices in the food service sector. Osborn, the president of the Hong Kong arm of the programme, is spearheading implementation on the Veganuary, a global programme to change the food system for good by introducing the vegan menu as part of the menu selection at Arcane.
Arcane’s Veganuary menu features refined plant-based courses, notably including a terrine of Japanese leeks with Crapaudine beetroot, pickled maitake, and maple hazelnut dressing; roasted butternut squash wrapped in white daikon, edamame, honey and soy dressing; together with a main course of warm salad of caramelised cauliflower with chickpea and cashew hummus, rainbow chard and black truffle. The five-course Veganuary menu is available all day at HK$888 per person, with individual dishes available as an a la carte option. Stefano Bartolomei, wine director of Arcane, has also designed a wine pairing for the Veganuary menu, available at an additional HK$588 per person.
