This November, the legendary Fergus Henderson of St John is returning to Hong Kong, joining forces with Hawksmoor’s Richard Turner and Rhoda’s Nathan Green in a rare six-hands collaboration dinner, including wine pairing by St. John restaurant co-founder and wine aficionado Trevor Gulliver.
From November 7-11, the meat-focused trio will prepare an elaborate four-course dinner, showcasing fine meats and trimmings, with signatures from each chef’s respective restaurant. The full menu is as follows:
Beer bread with nori seaweed butter
Homemade charcuterie: wagyu bresaola, Manx Loaghtan lamb ham and cured magret duck breast
Radishes and cod’s roe
Tomato, little gem and anchovy
Crispy pig’s cheek and chicory
Ox tripe and cheek gratin, bone marrow and parsley crumb
Buttered savoy cabbage with sage
Eccles cake and Lancashire cheese
Madeleines and Vieille prune
Each course will be matched with rare wines from the St. John cellar. The exclusive five-course menu is priced at HK$1,650 per person including wine pairing, where guests can select their preferred labels from Gulliver's wide range selected for the collaboration dinner event.
Rhoda’s bar is also set to be taken over as the no-reservations St. John Bar, where the London restaurant’s more relaxed style of eating is showcased, including notable signatures such as roast bone marrow and parsley salad, deep-fried tripe and ketchup, and ox heart bun. Tickets for the exclusive five-night dinner series are available to purchase at Rhoda and online here.
