The latest evolution of the Stories of the Sea menu at The Manor at The St. Regis Macao offers a wealth of seafood while showcasing the finest ingredients in the world

The latest evolution of The Manor’s Stories of the Sea menu—The Eighth Chapter—offers a wealth of extravagant seafood and showcases the finest ingredients in the world. The six-course menu, crafted by executive sous chef Michele Dell’Aquila, has been designed to highlight the freshness of the seafood and tantalise the taste buds with exceptional flavour and texture. "My philosophy is to create wholesome dishes from the fresh ingredients of the season, introducing new products to guests, and bringing them together to present dishes that reflect my way of cooking,” says Dell’Aquila.

Guests may indulge in Belon oysters served with yuzu sorbet, tapioca passion fruit and aged raspberry vinegar foam; smoked Atlantic mackerel with green beans, tuna fish broth and Osietra caviar; and Mediterranean sea bass with baby fennel and seaweed butter, salt picked cherry blossom and Loire Valley asparagus. Finish the meal with the Strawberry Sensation dessert. The menu is matched with the suggested wine-pairing prepared by The Manor's sommelier David Duan for an exquisite dining experience.

The Stories of the Sea – The Eighth Chapter set dinner menu is available from 6:00PM – 11:00PM and is priced at MOP888 per person, or MOP1,288 per person with the wine pairing package.
