The Japanese restaurant presents delights from Tokyo’s Ginza Sushi Kou Honten’s master chef

Celebrated for its best sushi experience, Ta-Ke is appointing Hirofumi Kojima as the restaurant’s new sushi head chef. A cuisine lover since childhood, Kojima began his journey as a sushi chef after his impression on chef Mamoru Sugiyama’s craftmanship. Upon completing his training, he joined Sushi Kou as an apprentice and was appointed sushi chef after two years. Kojima believes that ingredients should be paired with sushi rice of the right temperature to accentuate its natural flavours. At Ta-Ke, chef Kojima is presenting Edomae sushi with mesmerising dishes influenced by the diverse food cultures of Hong Kong
