The new season introduces a rich array of flower-inspired sweets and tipples

March is not just a month for art appreciation—it also marks the beginning of the spring season where flowers bloom, inspiring chefs and mixologists around the city. Here’s where to find the finest establishments that are presenting numerous floral-themed promotions starting this month.

What: The Langham’s executive pastry chef Matthieu Godard has taken inspiration from the season’s bouquets and turned them into sweet treats served in the Blooming Afternoon Tea. The desserts are inspired by and showcase the sweet aromas of blossoms, from Jasmine (pistachio and white chocolate macaron filled with jasmine cream) to Daisy (sable Breton with raspberry mousse and Chantilly cream) and Marigold (fruity dome with lemon biscuit base, topped with yuzu mousse and apricot jam). The afternoon tea set also includes savoury morsels, as well as a take-home portrait designed and customized by British illustrator Tanya Bennett. The Blooming Afternoon tea is priced at HK$348 per person and HK$598 for two. The guest-portrait service is available on March 25 and 26.

Dr. Fern’s Gin Parlour

What: Where there is gin, there are botanicals. The newly opened gin-lovers haven takes on the narrative of a doctor’s office, where a fictional physician ails his patients with herb-enriched concoctions— refreshing cocktails, that is. The hidden gin bar at Landmark showcases an eccentric collection of artisan gin varieties, mixed into a number of different G&Ts as well as floral cocktails, created and crafted by esteemed mixologist Gerry Olino. Served in tall Collins glasses, look out for the gin parlour’s signature varieties such as Blind Tiger gin and Fever Tree Tonic garnished with grated lime and rosemary, or G’Vine Floraison Gin & Fentimans Tonic with green grapes and doctors prescribed botanicals.
