Randall, an authority in Italian cuisine, is perhaps best known for his tenure at London’s legendary River Café in the late 1980s. After working with Chez Panisse’s Alice Waters, Randall went on to open Theo Randall at the InterContinental in London in 2006. In March, Randall will arrive in Hong Kong to debut the revamped Italian restaurant—which will be renamed Theo Mistral by Theo Randall—where the menu will expand from its original a la carte selection to accommodate more homemade pasta dishes, as well as renewed Italian classics and made-to-order pizzas.
