From Hong Kong to Macau, casual to fine-dining, celebrate the arrival of the Lunar new year with a rich array of fine Chinese dishes

Chinese New Year is never without blessings and good food, as dishes served during the biggest festival in the Chinese calendar call for meanings behind signature ingredients. Traditionally the name for black moss sounds similar to 'getting a fortune', the word 'prawn' signifies laughs and happiness, and steamed puddings for reaching new heights. Celebrating the arrival of the Year of the Rooster, five restaurants are presenting unique new festive menus best shared among friends and loved ones.


Lai Heen

A new addition to our Top 20 Restaurants this year, Lai Heen at the Ritz-Carlton Macau is celebrating the arrival of the lunar new year with a new festive menu created by the hotel’s executive sous chef Bill Fu. From January 28 to February 5,  guests can enjoy a six-course festive lunch set featuring signature items such as steamed French blue lobster dumpling with asparagus, deep-fried pork dumpling with air dried oyster, sautéed prawn with French beans and egg whites and the restaurant’s signature chef’s special braised pork belly with preserved vegetables. The special lunch set is priced at MOP588 per person.

From January 27 to February 5, the stylish Chinese restaurant will also present a special eight-course dinner showcasing chef Fu’s creative approach to Cantonese fare, including wok fried Australian wagyu beef with patty pan with homemade XO chilli sauce and crème brulee topped with matsutake mushroom powder. The special dinner set menu is priced at MOP2,100 per person, with an additional MOP500 for tea pairing or MOP550 for wine pairing.

Sing Yin

W Hong Kong’s Cantonese dining destination Sing Yin is wishing the best for Chinese cuisine lovers with executive Chinese chef Johnny Chan’s new festive new year menu. Guests can indulge in auspicious selections such as braised South Africa abalone with sea moss, dried oyster and seasonal vegetables, followed by a number of finely-executed Chinese main courses, including double boiled superior broth with abalone, sea cucumber, fish maw, conpoy, chicken, morels and black mushrooms, as well as sautéed and crispy prawns with fresh vegetables. The new Chinese new year delicacies are available on the a la carte from January 28 to February 11, priced from HK$98 to HK$628. A festive set lunch menu is priced at HK$388 per person, Alternatively, guests can order an eight-course set dinner that is also available at HK$688 per person or HK$5,980 for six.

Greater China Club

It is Chinese tradition to gather at the round table and enjoy good food with your loved ones during Chinese New Year. Wai-Teng Chan, executive chef of Greater China Club is presenting two auspicious 12-course banquet menus served during the lunar new year. Each menu showcases an array of luxurious Cantonese fare. Guests ordering the golden rooster menu can enjoy the restaurant’s signature barbecued whole suckling pig, braised dried oysters, pig’s tongue, and sea moss in oyster sauce, and sautéed sliced pigeon in foie gras sauce and deep-fried Yunnan ham, among other celebrated courses.

The fire rooster menu ups the ante with more technical dishes, including courses such as seafood dumpling wrapped in egg white skin, wok-fried prawns with oat and caramelised walnuts coated with egg yolk, braised whole abalone with goose webs in oyster sauce, and deep fried chicken coated with crispy rice and garlic and more. The golden rooster menu is priced at HK$6,888 and the fire rooster menu is priced at HK$8,888 per table.

Dynasty

Celebrated for its fine Cantonese fare, Dynasty at the Renaissance Harbour View Hotel is presenting a special Poon Choi, a traditional clay-pot dish layered with savoury ingredients from braised seafood to steamed chicken. The Chinese restaurant is launching a deluxe poon choi filled with auspicious ingredients, from whole dried scallops, abalone, fish maw, Chinese mushrooms and dried oysters to poached chicken, goose webs and sea moss. The deluxe poon choi is priced at HK$600 per person with a minimum order of four persons’ servings, available from January 20 to February 11. Takeaway options are available with an additional HK$250 for chinaware.

Larger parties can order a deluxe poon choi set menu, featuring the layered dish together with a rich array of delicacies such as chilled shredded scallop salad with assorted vegetables, sautéed fillet of garoupa with steamed egg white and scallions, as well as fried glutinous rice with assorted vegetables, among others. The auspicious eight-course dinner menu is priced at HK$998 per person with a minimum of four persons. The restaurant’s executive chef Kam Sing Suen will also be serving two new dishes: sautéed prawns in hawthorn sauce, and crab shell baked and stuffed with crab meat.

Dragon Noodles Academy

Newly opened in Central, Dragon Noodles Academy is welcoming the Year of the Rooster with a rich selection of auspicious dishes that symbolise good will and fortune for the joyful year to come. Guests are encouraged to share the contemporary noodle restaurant’s Chinese New Year offerings, including lobster and salmon prosperity toss, a playful twist of the traditional Lo Hei, Eight treasured beggar’s chicken, flash-fried baby abalone and shrimps, and steamed grouper with pomelo peel. The selection of Chinese New Year delicacies are available from now until February 12.
