The Japanese-Italian restaurant featured the ‘white diamonds’ through exclusive menus of seasonal delights

This autumn and winter, Tsim Sha Tsui’s Aqua is launching two new omakase menus celebrating the arrival of white truffles, sourced from Tuscany’s Savini Tartufi. Guests can indulge in fare such as roast suckling pig and foie gras ravioli in white truffle sauce; as well as grilled wagyu karubi yakiniku and lotus with garlic soy sauce, complete with white truffle panna cotta with poached pear. The five-course menu is priced at HK$988 per person with a wine pairing option for an additional HK$488 per person. Alternatively, an eight-course menu is priced at HK$1,188 per person with wine pairing for HK$688 per person. 
Aside from omakase menus, guests can also enjoy white truffle dishes from the a la carte menu, such as seasonal favourite poached egg with chestnuts, pumpkin, wild mushrooms and shaved white truffles, crafted by chef Alberto Hernandez. A unique seasonal cocktail fusing flavours of Italy and Japan are also available at Aqua Spirit. The White Truffle Waltz, pairing Campari and umeshu plum wine with truffle-flavoured fat-washed Bulldog gin, Carpano Antica formula vermouth and orange bitters, is seasoned with truffle salt and garnished with slices of white truffle, is available at HK$288, served with homemade truffle popcorn. The new truffle menus and cocktails are from now until December 15.
